Spiced Tea Punch

1 cup sugar
4 lemons, thinly sliced
2 oranges, halved and thinly sliced
12 whole cloves
3 cinnamon sticks
1-1/2 quarts strong brewed tea (try our Irish Blend)
2 cups water
1-liter ginger ale

In a non-aluminum saucepan, combine all ingredients, except soda. Over low heat, bring to a boil, stirring to bruise fruit.
Cool 1 to 2 hours. To serve, combine with ice in pitcher or punch bowl. Add soda.

If desired, add 2-1/2 cups of light rum to heated mixture.

Tea Time Scones
1/3 cup sugar
1 ¾ cup + 4 tsp. all purpose flour
1 tbsp. + 1 tsp. baking powder
Zest of ½ lemon
Zest of ½ orange
1/3 cup butter, cold cut into pieces
Juice of ½ lemon
Juice of ½ orange
1/3 cup heavy cream
1 egg + 1 yolk

1 egg white
1 ½ tbsp. sugar

Preheat oven to 350 degrees. In a mixing bowl, blend flour, sugar, baking powder, lemon and orange zest. Using a pastry blender or two knives, cut the butter into dry ingredients until mixture resembles coarse meal.

Add the remaining ingredients and mix until just blended. Turn out onto a lightly floured surface and knead 4 to 5 times. Place dough onto lightly greased cookie sheet and pat out to an 8-inch circle. With a knife, cut through the dough to mark into 8 wedges.

With a pastry brush, brush the top of the dough with a lightly beaten egg white. Sprinkle the top with remaining sugar. Bake for 15 minutes.

GREEN TEA POUND CAKE
1 1/2 cup cake flour
  3/4 cup sugar
  3/4 teaspoon baking powder
  1/2 teaspoon salt
  2 teaspoons Matcha (green tea) powder
1 1/2 sticks softened butter
2 tablespoons grated lemon zest
1 teaspoon vanilla
3 eggs
3 tablespoons milk

Preheat oven to 325F. Liberally grease and flour an 8x4" loaf pan.
Sift dry ingredients together into the mixing bowl. Mix together briefly.
Add butter and lemon zest. Mix on medium-high speed for one full minute.
Scrape down and mix in milk and vanilla. Mix until smooth and scrape. Mix in eggs, beating until just incorporated.
Pour into pan and set on baking sheet. Bake for 15-20 minutes and then remove from oven and with a sharp knife slash about 1/2" deep down the center of the loaf. Turn and continue to bake another 15 minutes. Remove from oven and place a piece of foil brushed with butter or sprayed with Pam gently over loaf. Bake another 20-30 minutes until tester in center comes out clean.

Green Tea Chocolate Cake
4 eggs
1 3/4 cup flour
1 1/2 cup sugar
3/4 cup butter
2 tbsps maccha powder (green tea powder)
1 tbsp chocolate chips

Put butter in a bowl and stir well until soften. Add sugar in the bowl and mix well. Whisk eggs in another bowl. Mix eggs and butter mixture together. Sift flour and green tea powder together. Add flour in the egg and butter mixture and mix. Add chocolate chips in the bowl and mix together. Spread some batter and place baking wax paper inside of a medium loaf pan. Pour batter into the pan. Bake in preheated 360F oven for 35 minutes.
